Donglaishun is a renowned Chinese restaurant brand with a history that dates back to 1903. Founded by Ding Deshan in Beijing, Donglaishun quickly gained fame for its signature dish, instant-boiled mutton, also known as Mongolian hotpot. Donglaishun originated in the 29th year of the Guangxu reign (1903) near the north gate of the Old Dong'an Market. Initially a porridge stall, it was rebuilt after a fire into a tile-roofed establishment named "Donglaishun Lamb Restaurant." To attract customers, Ding Deshan recruited a skilled chef from the prestigious Zhengyanglou Restaurant, known for his expertise in lamb hotpot. This chef's knowledge of lamb selection, slicing techniques, and presentation elevated Donglaishun's cuisine, making it a favorite among both locals and dignitaries.

 

Cultural Significance
