Beijing's food is more than Peking duck, though the duck is worth doing properly - carved at the table, with the pancakes, spring onion and sweet bean sauce. These programmes pair it with a dumpling workshop, a hutong street-food trail through the snack streets and night markets, and a two-day culinary journey that moves from the banquet table to the neighbourhood kitchens where locals actually eat breakfast.
Guides are chosen for their knowledge of the food, dietary requirements and allergies are passed to every kitchen in advance, and the vegetarian, halal and no-chilli versions are arranged on request. Tours are private and can run in the evening.
